El Grande (Hans Im Gluck)

Of the bazillion games I have played and owned, this is the best ever! It elegantly incorporates all the great aspects of gaming into one package: fun, a multitude of strategies, player interaction, a little luck, under two hours to play, great components, and never the same game twice. A must have!

Tal der Konige (Franckh-Kosmos)
Similar in play quality to El Grande, but with not as many options. However, the skullduggery in the actual building of pyramids more than offsets any deficiency.

Civilization, with expansions (Avalon Hill)
Where else can you determine the ascent of civilization over 8,000 years leading into the Roman era? Although it's a bit more complex than some (as usual, the rules are a bear, but you can teach it to someone in 15 minutes), and play time is loooong, there is too much great stuff in this game not to have it.

Seafarers of Catan (Mayfair)
This addition to Settlers of Catan adds much to the original, including all of the fun frustration all players must endure. Another classic, with its only knock being that it's a bit higher on the luck aspect than some like.

Conquest (Donald Benge)
Take chess. Add an even more infinite variety of moves. A cool map. And make it FUN. You have Conquest. No other completely strategic game even comes close.
